Fish Provencal
4 large cod fillets
2 small red onions
4oz vegertable stock
4 tbsp dry red wine
1 garlic clove, crushed
2 courgettes, sliced
1 yellow pepper, seeded & slices
1 14oz can chopped tomatoes
1tbsp chopped fresh tyme
salt & black pepper
potato gratin, to serve
preheat oven - 180C/350F/gas4
cut up onions into 8 wedges
put onions into heavy based saucepan on stove - add stock
cover and simmer for 5mins
uncover, continue to cook, stirring occasionally, until stock reduced entirely
add wine & garlic - cook til onions are soft
Add courgettes, yellow pepper, tomatoes & tyme. season to taste.
simmer for 3mins.
Put the fish at the bottom of a large casserole dish
Spoon the sauce onto the fish
Cover & cook in oven for 15-20 mins, until fish is flaky.
Serve with potato gratin
Potato Gratin
1 garlic clove
5 large baking potatoes, peeled
3tbsp freshly grated parmesan cheese (or any cheese of your choice)
1 pint vegetable stock
salt & pepper
Preheat oven 200C/400F/Gas6
Half garlic clove & rub over the base & sides of a large shallow dish
slice the potatoes very thinly and arrange a third of them in the dish
Sprinkle over half the cheese & seasoning
Pour over some of the the stock
Continue layering the potatoes & cheese as before
Pour over the remainder of the stock
bake for hour & half approx (until potatoes tender) & top brown
