Default Need help from any cooks or food people!! URGENT!!

Ok so here's the deal! I have until Monday to come up with some ideas for this competition my food tech teacher entered me for! We have to make a fish dish as part of a school meal! If anyone has any fishy ideas i would be mighty greatfull!!

put two cooked fish steaks in a bowl, pour on a small amount of hot vegatable soup, put mashed potato on top of that, then finally top with grated chedder cheese warm in oven on gas mark 5 , for about 3 mins, one of Mousies recipies.

Get a pan and melt a nob of butter into it.
Then add a finely diced onion with some finely diced bacon and brown them off.
Add a bit of sweetcorn and finely diced capsicum(pepper).
Cook for another 2 minutes or so.
Then add some double cream to make it in a sauce
Salt/Pepper and spices to taste (I usually add paprika and thyme)

Get a bowl and put some flour (plain or self raising doesn't matter) into it with a pinch of salt, pepper and spices if you like.
Put the fish fillet into the bowl to coat it all over.
Get a frying pan with a couple of nobs of butter in it.
Fry the fish slowly, once golden brown on one side turn it over and golden brown the other. The flour mix helps it go a bit crispy on the outside.

Once cooked put fish on a plate and pour your creamy bacon and onion sauce on top or on the side.

I am vegetarian but my husband and daughter are not and they love fish these are two of the fish recipes that I cook for them, the Baked Fish with Mushrooms and Smoked Almonds is a favorite for special occasions and when I have the time to make it. The Italian Style Fish with Vegetables makes a great dish as I serve it with wild rice and it makes a great meal the fish and veggies and wild rice. I hope this helps you. Baked Fish with Mushrooms and Smoked Almonds
2 pounds fish fillets, cut into serving size
3 tablespoons butter or margarine pieces
1 tablespoon lemon juice
1½ cups sliced mushrooms
1 teaspoon salt
½ cup hickory-smoke flavored almonds
¼ teaspoon lemon pepper
2 tablespoons chopped parsley
use parsley sprigs and lemon wedges for garnish

Place fillets in a single layer in a well-oiled baking dish. Sprinkle with lemon juice, salt, and lemon pepper. Bake at 350 degrees for 10 minutes per inch of thickness or until fish flakes easily and is no longer translucent in the center. Then, combine remaining ingredients in a saucepan and sauté over low heat for 5 to 7 minutes.
To serve, spoon mushroom mixture over fish. Garnish with parsley springs and lemon wedges.

Italian Style Fish and Vegetables

2 tablespoon Olive oil
1 medium Sliced onion
2 1/2 oz Jar sliced mushrooms, drain
1/2 teaspoon Basil
1/2 teaspoon Fennel
2 cup Frozen mixed vegetables
2 lb Fresh or frozen sole (thawed)
1/4 teaspoon Salt
1/4 teaspoon Pepper
2 medium Tomatoes, sliced
1/3 cup Grated parmesan cheese

In a large skillet over medium heat, heat the oil. Add the onion. Add mushrooms, basil and fennel.
Sauté for 4 minutes or until onion is tender. Stir in frozen vegetables. Place fish fillets over vegetables, sprinkle with salt and pepper. Arrange tomato slices over fish. Reduce heat to low, cover and cook 12-16 minutes or until fish flakes with a fork. Remove from heat, sprinkle with Parmesan cheese, cover and let stand until cheese melts (about 3 min).

Heli - here's a nice one

Fish Provencal

4 large cod fillets
2 small red onions
4oz vegertable stock
4 tbsp dry red wine
1 garlic clove, crushed
2 courgettes, sliced
1 yellow pepper, seeded & slices
1 14oz can chopped tomatoes
1tbsp chopped fresh tyme
salt & black pepper

potato gratin, to serve


preheat oven - 180C/350F/gas4

cut up onions into 8 wedges
put onions into heavy based saucepan on stove - add stock
cover and simmer for 5mins

uncover, continue to cook, stirring occasionally, until stock reduced entirely
add wine & garlic - cook til onions are soft

Add courgettes, yellow pepper, tomatoes & tyme. season to taste.
simmer for 3mins.
Put the fish at the bottom of a large casserole dish
Spoon the sauce onto the fish
Cover & cook in oven for 15-20 mins, until fish is flaky.

Serve with potato gratin

Potato Gratin

1 garlic clove
5 large baking potatoes, peeled
3tbsp freshly grated parmesan cheese (or any cheese of your choice)
1 pint vegetable stock
salt & pepper


Preheat oven 200C/400F/Gas6

Half garlic clove & rub over the base & sides of a large shallow dish

slice the potatoes very thinly and arrange a third of them in the dish
Sprinkle over half the cheese & seasoning
Pour over some of the the stock
Continue layering the potatoes & cheese as before
Pour over the remainder of the stock

bake for hour & half approx (until potatoes tender) & top brown

Heli - it is not as long winded as it sounds - quite easy really

I tend to just grill fish, it's quick and easy, which is why I haven't come up with any suggestions Heli.

HERBY FISHCAKES WITH LEMON SAUCE

12oz potato, roughly chopped
5 tbsp skimmed milk
12oz haddock, skinned & boned
1 tbsp lemon juice
1tbsp creamed horseradish sauce
2tbsp freshly chopped parsley
2cups breadcrumbs
salt & pepper
flour to dust

sugar snap peas or mange-tout and a sliced tomato & onion salad

Lemon & chive sauce

thin rind & juice of half a lemon
4oz dry white wine
2 thin slices of fresh root ginger
2tsp cornflour
2tbsp snipped fresh clives



Cook potatoes in large saucepan of boiling water for 15 - 20 mins
Drain & mash with the milk & season to taste

Puree the fish together with the lemon juice & horseradish sauce in a blender/food processor.
Mix with the potatoes & parsley

with floured hands, shape the mixture into 8 fishcakes and coat with breadcrumbs
Chill in the fridge for 30mins

preheat the grill to medium & cook fishcakes for 5mins on each side, until browned

sauce
Put thinly cut rind & juice in a large saucepan, with wine & ginger
Season to taste

Simmer, uncovered, for about 6mins
Blend the cornflour with 1tbsp of cold water, add to the pan and simmer til clear
Stir in the chives immediately before serving

Serve the sauce hot with the fishcakes, garnish with parsley and serve with the mange-tout, tomato & onion salad

Well i'm a great cook when someone asks me to make something but its just hard to come up with recipes when noones telling you what to cook!

(phew got myself out of that one)
